Kökleri çok eskilere dayanan döner kebap, günümüzde genelin çok sevdiği bir lezzet olarak kendisine yer bulmuş. Her şehrimiz bu lezzeti farklı yorumlamış ancak bana göre geleneksel hâli kuzu ya da kuzu-dana karışımından yapılan hâlidir...

Herkes kendi damak tadına göre lezzet adresleri verir ve şüphesiz ki samimidir. Ancak yemeklerin kalite standartları vardır. Bu standartlar da coğrafya, ürün, orijinallik, pişirme teknikleri gibi kriterlerle sınıflanır. Peki çok sevilen yemeklerimizi ne kadar tanıyoruz ve sizce bu yemeklerin seçimlerinde neler aramalıyız Gelin öncelikle İstanbul'da ülkemizin en sevilen lezzetlerinden birinin peşine düşelim ve bu lezzetin iyisini seçerken neler aramalıyız sorusuna cevap arayalım. İşte o lezzetlerimizden biri DÖNER. Araştırmalarım bana en azından mantık olarak dönerin köklerinin, Orta Asya Türklerine kadar derinleşebileceğini söylüyor. Evliya Çelebi, Kırım Türklerinin hazırladığı bir tür döneri öve öve bitiremiyor. Türk mutfağının ayrılmaz bir parçasını oluşturan DÖNER kebabın ilk izlerinin Orta Asya'da LÜLE KEBAP ismiyle görüldüğü ve bugünkü şekline Anadolu'da kavuştuğu varsayımı çok yanlış olmayabilir.
